What to bring to the Picnic when the nostalgia kicks in: Salted Butterscotch Scotchies
Updated: Jul 14, 2021
This is actually a recipe my husband makes in our home. He grew up on these cookies and snickerdoodles so this is a treat when he makes them. I honestly had not had these until we started dating so here's to him opening up my cookie horizon! The trick in this recipe is his addition of Maldon sea salt as a sprinkling on top right before you bake them. It takes this age old recipe to the next level!
Ingredients:
1 1/4 cups unsifted flour
1 tsp baking soda
1/2 tsp kosher salt
2 tsp cinnamon
1 cup butter, softened
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
2 tsp vanilla extract
3 cups Old-Fashioned Quaker oats
1 (11 ounce) package Butterscotch Flavored Morsels
1-2 tsp of Maldon sea salt for sprinkling
Preheat oven to 375 degrees F.
Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
Gradually beat in flour mixture.
Stir in oats and morsels.
Drop by rounded Tablespoonfuls onto an ungreased baking sheet (I like to use a cookie scoop, portions come out perfect every time)
Sprinkle each cookie with a bit of sea salt
Bake cookies for 8 minutes
Cool on baking sheets for a few minutes, remove to wire racks to cool completely.
